Wonderful Weather For Risotto

Snowy and cold here in Upstate New York…snow falling in Italy. What else to make but some Risotto

Using Arborio Rice, Vito & Joe’s Extra Virgin Olive Oil, garlic, onions and white wine Risotto is a great appetizer or served as a side dish to your favorite fish, chicken or steak meal.

Arborio Rice I like to use Arborio Rice for Risotto as it is not as starchy as other types of rice available and it is also a shorter grain rice. Some people will recommend Carnaroli rice but I prefer Arborio Rice. You will first heat your Vito & Joe’s Extra Virgin Olive Oil, onions and garlic; followed by your rice to toast the rice. Once the rice is toasted a nice cup of white wine is added for flavor.


Chicken or Vegetable stock will then get slowly until its absorbed into the rice, and rice is nice and creamy.


For a final touch finish off with unsalted butter and freshly grated Parmesan cheese.


Immediately serve on a flat dish or shallow plate and garnish with fresh sprig of parsley.
