Cheesy Garlic Bread

Ingredients

  • 1 loaf of Ciabatta or Italian bread  

  • ½ cup of shredded Asiago Cheese 

  • ½ cup of shredded Fontina Cheese 

  • ½ cup of shredded Parmesan Cheese 

  • 1 cup of shredded Mozzarella Cheese 

  • ½ cup of shredded Romano Cheese 

  • 1 stick of melted Butter

  •  4-5 cloves of Garlic

  • 1 large Onion

  • Vito & Joe’s Extra Virgin Olive Oil

  •  Freshly ground black pepper 

  • ¼ cup of freshly chopped Parsley 

  • Salt 

    Ingredients are for one loaf

How to Prepare

  1. Preheat the oven to 400 degrees.

  2. Finely slice the onion.

  3. In a large cast iron pan, put 1/3 cup of Vito & Joe’s Extra Virgin Olive Oil and heat on high.

  4. Place the sliced onions in a pan and cover for 3 -5 minutes. Stir.

  5. Lightly cover the onions and continue to heat for another 30 minutes until the onions caramelize.

  6. In a large bowl, mix all of the cheeses together. Set aside.

  7. While the onions are cooking, slice your bread length-wise, horizontally. Set aside.

  8. In a food processor, place your melted butter, 5 cloves of garlic, about 1/8 cup of your parsley and 1/3 cup of Vito & Joe’s Extra Virgin Olive Oil.

  9. Pulse the ingredients for 30 – 40 seconds.

  10. Add a pinch of salt and freshly ground black pepper to taste.

  11. Pulse for another 1 -2 minutes.

  12. Cut your loaf of bread in half, trying to leave one side connected .

  13. Place the bread on a tray with aluminum foil and add the garlic mixture to the loaf. Make sure to stir the mixture as you add it.

  14. Wrap the loaf in the foil and cook in the oven for 10 minutes at 400 degrees. After the 10 minutes let the bread cool for 2-3 minutes.

  15. Remove the tinfoil, open the loaf, and add your caramelized onions. Make sure to spread evenly.

  16. Add your cheese mixture to the bread. If your cheese layer is thick, you can use a piece of aluminum foil over the top for half the time to keep the cheese from over-browning.

  17. Place the loaf back in the oven (still at 400 degrees) for another 10 minutes. Make sure the loaf is face-up. If covering the top with aluminum foil make sure to remove after 5 minutes.

  18. Allow the bread to rest for a few minutes after removing it from the oven,

  19. Once the bread has cooled, use a sharp knife to slice the bread into individual pieces.

  20. Plate and Enjoy!
