Crostini with Gorgonzola Cheese


How to Prepare

   Baguette (1)

   Nutmeg (1/8 tsp.)

   Onions (2)



   Chicken stock (1 cup)

   Prosciutto (6 slices)

   Reduced balsamic vinegar

   Walnuts (1 cup – chopped)


   Mascarpone cheese (1/3 lb.)

   Olive oil (4 tbsp.)

   Gorgonzola cheese (1/3 lb.)

  1. Chop up the onions to be caramelized. 
  2. In a saucepan, add in the chopped onions, olive oil, and chicken stock. Stir and cover on high heat. 
  3. Take the baguette and slice it into ½ inch slices and prep them. 
  4. Spread the slices out on the other side. Grill until they have grills marks on both sides. Then set them aside. 
  5. Chop up walnuts while the onions are still caramelizing. 
  6. Take the gorgonzola cheese, salt, pepper, nutmeg, a splash of olive oil and the mascarpone cheese and mx them all together. 
  7. Using a spreading knife, spread the cheese over the top of the baguette. 
  8. Add walnuts, prosciutto, and onions. 
  9. Drizzle crostini’s with balsamic and parsley. Enjoy!
