How to Prepare
Egg yolks (4)
Chicken stock (1 ½ tbsp.)
Lemon Juice (1 ½ tbsp.)
Unsalted butter (1 stick)
Salt (to taste)
Freshly ground black pepper (to taste)
Bacon fat (2 tbsp.)
- Melt the butter in a small saucepan with 2 tablespoons of bacon fat.
- In a mixer with a whisk attachment, cream the egg yolks.
- Add lemon, chicken stock, salt and pepper.
- Turn the mixer on high and slowly spoon in butter.
- Blend on high until creamy. Enjoy!
