Hollandaise Sauce


How to Prepare

   Egg yolks (4)

   Chicken stock (1 ½ tbsp.)

   Lemon Juice (1 ½ tbsp.)

   Unsalted butter (1 stick)

   Salt (to taste)

   Freshly ground black pepper (to taste)

   Bacon fat (2 tbsp.)


  1. Melt the butter in a small saucepan with 2 tablespoons of bacon fat. 
  2. In a mixer with a whisk attachment, cream the egg yolks. 
  3. Add lemon, chicken stock, salt and pepper. 
  4. Turn the mixer on high and slowly spoon in butter. 
  5. Blend on high until creamy. Enjoy!
