Roasted Red Pepper and Eggplant Spread
How to Prepare
Roasted eggplant (1 – cut into squares)
Parmesan cheese (½ cup to 1/3 cup)
Roasted garlic (4 cloves – roughly chopped)
Roasted red peppers (8 – peeled and de-seeded)
Salt (to taste)
Toasted Italian bread
Fresh ground black pepper
Vito & Joe’s Extra Virgin Olive Oil
- In a food processor, place the red peppers, parmesan cheese roasted garlic cloves, roasted eggplant, salt, freshly ground black pepper and 1/3 cup of Vito & Joe’s Extra Virgin Olive Oil.
- Pulse until smooth.
- Serve on toasted Italian bread. a. Also works as a great addition to any recipe or hummus. Enjoy!
