Roasted Red Pepper and Eggplant Spread

Ingredients

  • Roasted eggplant (1 – cut into squares)   

  • Parmesan cheese (½ cup to 1/3 cup)   

  • Roasted garlic (4 cloves – roughly chopped)   

  • Roasted red peppers (8 – peeled and de-seeded) 

  •  Salt (to taste)   

  • Toasted Italian bread   

  • Fresh ground black pepper   

  • Vito & Joe’s Extra Virgin Olive Oil

How to Prepare

  1. In a food processor, place the red peppers, parmesan cheese roasted garlic cloves, roasted eggplant, salt, freshly ground black pepper and 1/3 cup of Vito & Joe’s Extra Virgin Olive Oil.

  2. Pulse until smooth.

  3. Serve on toasted Italian bread. a. Also works as a great addition to any recipe or hummus. Enjoy!
