How to Prepare

Zucchini flowers
   Zucchini flowers (24)

   Caciocavallo cheese (1 cup)

   Prosciutto ( 2 1⁄2 slices – diced)

   Egg (1)

   Buffalo mozzarella cheese (1 cup)

   Fresh ground black pepper

   Vito & Joe’s Extra Virgin Olive Oil










  1. Heat a cast iron pan on a stovetop.
  2.  Add about 1/3 of a cup of Vito & Joe’s Extra Virgin Olive Oil to a simmer.
  3.  Pull the spines off of the zucchini flowers – carefully!
  4.  Cut each stem to about 1⁄2 inch.
  5.  Gently open each flower and blow on to clean slightly.
    1.  Set them aside.
  6.  In a large bowl, mix together the mozzarella cheese, the
    caciocavallo cheese, the egg and the prosciutto with a wooden spoon.
  7.  Crank in some pepper and add a splash of Vito & Joe’s Extra Virgin Olive Oil. Stir.
  8.  Scoop the cheese into each flower using a small spoon or pipe it inside with a plastic bag (like it was frosting).
  9.  Place the flowers in the pan and turn up the heat.
  10.  Fry for about 3 minutes on each side.
  11.  When the stem is tender, remove onto a plate covered with a paper towel.
  12.  Serve warm. Enjoy!
