Almond Cake with Orange Sugar Glaze


How to Prepare

   Granulated sugar (½ cup)

   Baking powder (1 tsp.)

   Vanilla extract (1 tsp.)

   Almond extract (1 tsp.)

   Orange zest (2 ½ tbsp.)

   Flour (1 tsp.)

   Pastry flour (½ cup)

   Powdered sugar (¼ cup)

   Juice from an orange (1 – 2 tbsp.)


   Eggs (4) (4 egg yolks and 4 egg whites)

   Raw almonds (2 cups – toasted – chopped)



   Powdered sugar (2 cups)

   Raw almonds (½ cup – toasted – chopped)

   Orange zest

   Juice form the orange (2 ½ tbsp.)

   Almond extract (1 tsp.)


  1. Preheat the oven to 350 degrees.
  2. Toast all the almonds in the even for about 10 minutes. 
  3. Combing the egg yolks, powdered sugar, and granulated sugar using an electric mixer.
  4. Add the flour and baking powder to the egg mixture.
  5. Continue mixing and add in the orange zest and juice.
  6. In a separate bowl, add the egg whites, vanilla, and 2 cups of chopped almonds.
  7. Fold the 2 mixtures together.
  8. Prepare a 10 inch spring form pan with butter and flour. 
  9. Add the batter to the pan and cook for 25 minutes. 
  10. While the batter is cooking, prepare the glaze: 
    1. Combine the juice form the orange, the almond extract and powdered sugar to the remaining ½ cup of chopped almonds.
  11. Once the cake has finished baking in the oven, remove it and let it cool for a few minutes. 
  12. Spread the glaze over it once it has cooled down a little. Enjoy!
