World's Best Carrot Cake


How to Prepare


   Flour (2 ½ cups)

   Heavy whipping cream (1 cup)

   Cinnamon (1 tsp.)

   Ginger (1 tsp.)

   Nutmeg (½ tsp.)

   Salt (¼ tsp.)

   Vanilla (1 tsp.)

   Eggs (4)

   Egg yolk (1)

   Lemon juice (¼ tsp.)

   White sugar (1 cup)

   Brown sugar (1 cup)

   Unsalted butter (10 tbsp.)

   Baked powder (2 tsp.)

   Baking soda (1 tsp.)

   Walnuts (1 cup – chopped)

   Carrots (2 ½ cups – half shredded, half     grated)


   Mascarpone cheese (24 oz.)

   Powdered sugar (2 cups)

   Heavy cream (1/3 cup)

   Vanilla (1 tsp.)


  1. Preheat the oven to 350 degrees.
  2. In a mixing bowl, mix the eggs together until frothy.
  3. Mix the butter and sugar into the eggs. 
  4. Mix in all other wet ingredients toe the butter and sugar mixture. 
  5. In a separate bowl, add all the dry ingredients. Stir.
  6. Add in the carrots to the wet ingredients. Stir.
  7. Add the wet ingredient mixture to the dry ingredients. Mix. 
  8. Once mixed, add in the walnuts and mix by hand. 
  9. In 8 inch cake pans (2), equally pout the batter. 
    1. Let the ingredients set for 30 minutes before putting them in the oven for 20 – 25 minutes.


  1. In a mixing bowl, add the cheese and sugar. Mix.
  2. Add in the cream and vanilla. Mix.
  3. Once the cake cools, frost it. Enjoy!
