Chocolate Caramel Coffee Vanilla Ice Cream Affogato


How to Prepare

  Ice Cream:

   Heavy cream (2 ½ cups)

   Whole milk (1 ½ cups)

   Egg yolks (8)

   Sugar (1 cup)

   Vanilla paste (1 ½ tsp.)

   Nutmeg (1/8 tsp.)

   Salt (just a pinch)



   Sugar (3 cups)

   Vanilla (2 tsp.)

   Salt (just a pinch)

   Chocolate (½ oz. – bitter)

   Espresso (1 cup)



 Ice Cream:

  1. In a mixing bowl, add in the egg yolks.
  2. Using about half of the sugar, add it to the yolks and mix. 
  3. In a separate bowl, add in the milk, heavy cream, and the rest of the sugar, salt, nutmeg, and vanilla. Stir.
  4. Heat that mixture over the stove. 
  5. Stir the mixture consistently and remove it from the heat when it starts to steam.
  6. Using a ladle, slowly add in the cream mixture into the egg yolk mixture. Whisk. 
  7. Once tempered, pour back into the yolk mixture.
    1. Continue to whisk while you pour.
  8. Put it back on the stove until it coats the back of the spoon. 
  9. Remove from the heat and put the pan over a bowl of ice.
    1. Stir to bring the temperature down.
  10. Strain it and then place in an ice cream maker for roughly 30 – 45 minutes.


  1. In a mixing bowl, add in the sugar, chocolate and salt. Stir. 
  2. In a saucepan, add the sugar mixture and warm it up.
  3. Once the sugar is warm, add in the espresso slowly and keep mixing. 
  4. Add in the vanilla. Stir. 
  5. Add in the rest of the espresso. a. Mix really well. 
  6. Right before the sugar starts to thicken, add the butter.
  7. Keep stirring until it gets to a thick, syrup consistency.
  8. Serve over vanilla ice cream. Enjoy!
