Strawberries in Wine with Mascarpone Cheese


How to Prepare

  Marinade for Strawberries:

   Strawberries (1 lb.)

   Granulated sugar (¾ cup)

   Lemon (½ for juice and zest)

   Wine (Red-Tuscano) (1 cup)

   Vanilla (1 tsp.)

   Nutmeg (1/8 tsp.)



  Cream Mixture:

   Heavy whipping cream (1 cup)

   Vanilla (1 tsp.)

   Mascarpone cheese (½ cup)

   Egg yolks (4)

   Granulated sugar (¼ cup)

   Salt (just a pinch)

   Almonds (25 – chopped)




  1. Remove the tops of the strawberries and cut up the berries into small pieces.
  2. Add ½ a teaspoon of lemon zest and juice, the vanilla, sugar, nutmeg and wine. 
  3. Gently stir and set in the refrigerator covered for at least an hour (preferably overnight).


  1. Add the egg yolks into a blender.
  2.  Slowly add in the sugar and blend until smooth. 
  3. Add in the cream, cheese, nutmeg, vanilla and salt. a. Blend until there are peaks. 
  4. Chop up the almonds for the topping. 
  5. In a small bowl, fill it with cream, add the strawberries, some marinade, a little more cream and top with the almonds. Enjoy!
