How to Prepare

5 Eggs (separated) 

40 Ladyfinger Cookies 

4 shots Espresso

2 cups Mascarpone Cheese

1 cup Heavy Cream 

3 tsp Vanilla

½ tsp Nutmeg 

½ tsp Cream of Tartar

1 cup Sugar (divided) 

2 bars Semi-Sweet Baking Chocolate (shaved) 

  1. Beat the egg whites, cream of tartar, 1 teaspoon of vanilla and 2 tablespoons of sugar. 
    1. Set aside. 
  2. In another bowl, cream the egg yolks, 1 teaspoon of vanilla and 5 tablespoons of sugar. 
  3. Combine both of the mixtures.
    1. Set aside. 
  4. In a mixing bowl, add the heavy cream, 2 tablespoons of sugar and a teaspoon of vanilla.
    1. Beat until stiff peaks form. 
  5. Add the mascarpone cheese, the remaining sugar and the nutmeg. 
    1. Cream the ingredients together.
  6. Fold all of the ingredient together and chill for 15 minutes. 
  7. Remove from the refrigerator and refold the ingredients.
  8. Begin layering the ingredients in a round spring form pan.
    1. Start with one layer of custard. 
    2. Layer with ladyfingers dipped in espresso. 
    3. Continue layering with custard and shaved chocolate.
      1. Tap the pan on the counter between layers. 
  9. Top the final layer with chocolate shavings. 
  10. Chill for at least 2 hours (preferably overnight).
