Fried Mozzarella in Phyllo Dough

Ingredients

  • Just shy of 1 pound of firm mozzarella

  • Phyllo dough (previously thawed)

  • Parmesan Reggiano cheese

  • French sea salt

  • Yellow olive oil (not extra virgin)

  • Olive oil for deep frying

  • Rack with paper towels for draining

How to Prepare

  1. Slice the firm mozzarella into thin discs, about a quarter-inch thick.

  2. Lay out two layers of phyllo dough on a dry surface. Make sure your table is dry to prevent moisture from seeping through.

  3. Place a slice of mozzarella on the front half of the phyllo dough.

  4. Trim any excess phyllo dough from around the mozzarella slice.

  5. Brush the edges of the phyllo dough with water to help seal the package.

  6. Fold the top layer of phyllo dough over the mozzarella, pushing it down gently to adhere.

  7. Fold the sides over the mozzarella, sealing the edges.

  8. Brush a little more water on top of the package to ensure it sticks together.

  9. Heat your yellow olive oil in a cast-iron pan to about 375 degrees Fahrenheit (190 degrees Celsius).

  10. Gently place the mozzarella package in the hot oil. Be cautious as it might splatter due to the moisture in the mozzarella.

  11. Cook for about 30 seconds on each side, flipping it once or twice until it puffs up and turns golden brown.

  12. Remove the fried mozzarella from the oil and place it on a rack with paper towels to drain any excess oil.

  13. While it's still hot, sprinkle some grated Parmesan Reggiano cheese on top to allow it to melt.

  14. Finish with a pinch of French sea salt for added flavor.

  15. Serve the fried mozzarella while it's hot and enjoy the crispy, cheesy goodness.
