Kicking Delicious Eggnog

Ingredients

  • 8 egg yolks

  • 3 cups whole milk (grass-fed organic certified, if possible)

  • 3 cups heavy whipping cream

  • 1 teaspoon cinnamon

  • 1/2 teaspoon nutmeg (freshly ground)

  • 1/4 teaspoon clove

  • 2 teaspoons vanilla extract

  • 1 and 1/2 cups granulated sugar (divided)

  • Pinch of salt

  • 1/2 cup brandy (optional)

  • 1/2 cup Disaronno or other almond liqueur (optional)

  • Almonds, for garnish

How to Prepare

In a heavy saucepan, heat the milk and cream over low heat.

  1. Add cinnamon, nutmeg, clove, and vanilla to the milk mixture. Stir gently.

  2. In a separate bowl, cream together egg yolks and 3/4 cup of sugar until fluffy.

  3. Gradually add a small amount of the hot milk mixture to the egg mixture to temper the eggs.

  4. Return the egg mixture to the saucepan with the remaining hot milk mixture. Stir continuously over low heat for 5-10 minutes until creamy. Do not let it boil.

  5. Optional: Add brandy or almond liqueur if desired. Stir well.

  6. Remove from heat and let it cool, then refrigerate for at least 2-3 hours to allow flavors to meld.

  7. Serve the chilled eggnog in mugs, topped with a sprinkle of almonds.

  8. Garnish with freshly grated nutmeg.
