Pasta Omelette Frittata Neapolitan

Ingredients

  • 1 lb of Pasta (Any type you enjoy)

  • 10-12 Cherry Tomatoes 

  • 1/3 lb Mozzarella Cheese

  • 1/3 cup Parmesan Cheese

  • Choice of Meat

  • 4 Eggs

  • Handful of Parsley

  • Salt

  • Black Pepper

  • Olive Oil

How to Prepare

  1. Preheat Oven to 400 degrees

  2. Boil water with pinch of salt

  3. Drop Pasta into pot and stir

  4. Use a large mixing bowl-Crack four eggs and mix till smooth

  5. Chop cherry tomatoes and add to bowl

  6. Grate cheeses and add to bowl

  7. Cut meat into 'bite size' cubes and add to bowl

  8. Chop parsley and add to bowl

  9. Cool pasta when finished and drain

  10. Add strained pasta and mix ingredients well

  11. Use cast iron pan and spread olive oil on the bottom of pan for baking A

  12. dd ingredients from bowl to pan

  13. Add grated cheeses, parsley and pepper to top of the dish before placing into oven for crispy top

  14. Cook in oven for 10-20 minutes

  15. Let dish cool and enjoy!
