World's Best Roasted Chestnuts

Ingredients

  • 1 lb. chestnuts

  • 3 tbsp. butter

  • ½ cup water

How to Prepare

  1. Check the make sure your chestnuts are all good. Squeeze each to see if there’s a gap between the shell and the nut inside. If there’s a gap or the chestnut is cracked, discard it. Rinse the chestnuts well.

  2. Score chestnuts using a knife or scissors. Place the flat side down and score horizontally across the curved side.

  3. Once scored, soak chestnuts in water for 20 minutes.

    1. Optional: Add flavor to your water and soak the chestnuts for at least 2 hours or overnight to infuse with flavor. Try wine, honey, sugar, or anything you want!

  4. Heat a cast iron pan on medium-high heat and add your chestnuts straight from the water as the pan heats. Add ½ cup water and cover with a lid.

  5. Once the water begins to bubble, stir the chestnuts after 2 or 3 minutes. Continue cooking until the chestnuts open where you scored. If the water evaporate before they all split, add some more water. Continue stirring and place opened chestnuts on a plate to rest while the rest open.

  6. Return all chestnuts to pan once the have all popped open. Turn the heat down to medium-low and add 3 tbsp. butter. Stir the chestnuts for around 30 seconds and turn the heat off. Continue stirring to coat everything.

  7. Transfer to a plate and let them cool for 5 to 10 minutes, then eat warm. Enjoy!
