Caesar Salad

Ingredients

Croutons:

  • Butter (¼ cup – melted) 

  • Garlic (3 cloves) 

  • Sea salt (1 tbsp.) 

  • Ground Pepper (1 tbsp.) 

  • Long French baguette (cut into 1 inch cubes) 

Dressing:

  • Egg yolks (3) 

  • Parmesan cheese (1/3 cup) 

  • Garlic (3 cloves) 

  • Balsamic Oil (1 tbsp.) 

  • Lemon juice (2 tsp.) 

  • Dijon mustard (1 tbsp.) 

  • Salt (1 ½ tsp.) 

  • Pepper (1 ½ tsp.) 

  • Olive Oil (1/3 cup)

How to Prepare

  1. Spread the cut croutons onto a pan.

  2. Preheat the oven to 400 degrees.

  3. Slice the garlic thin and pound under saran wrap to make a paste.

  4. Add garlic to the melted butter and mix well.

  5. Add salt and pepper to the mixture.

  6. Spoon the mixture onto the croutons.

  7. Bake the croutons for 10 – 15 minutes at 400 degrees.

  8. Sprinkle with salt and pepper after baking.

Dressing:

  1. Whisk the eggs and oil together and mix well.

  2. Add garlic, balsamic, lemon juice, mustard, salt, pepper, and the parmesan cheese.

  3. Serve over 3 heads of cleaned and cut Romaine lettuce.
