Pasta Pastina Soup


How to Prepare

7 cups of Chicken or Vegetable Stock 

½ lb Pastinis
(little pasta)

2 cups of Parmesan cheese 

Parsley (to garnish)

Sea Salt

Fresh Ground Pepper 

Olive Oil

  1. In a large pot, heat stove top to medium-high and pour the 7 cups of stock inside
  2. Add the pastini into the stock and immediately stir so nothing sticks. 
  3. Add ½ tsp of pepper and 2 tbsp of olive oil
  4. Stir as stock heats up and add ¼ tsp of salt 
  5. Slowly and consistently stir the stock for 8 – 10 minutes
    Tip: Stir every 30 seconds!
  6. After about 10 minutes, add 1-1½ cup of parmesan cheese
  7. Stir stock until cheese is mixed and melted
    Tip: Add in almost all of the remaining cheese (leaving some to sprinkle on top at the end) 
  8. Cook until the soup reaches a gentle boil
  9. Remove from the heat and ladle into a serving bowl
  10. Garnish the top with some fresh parsley and some parmesan cheese
