Tuscan Onion Soup

Ingredients

How to Prepare

   Red onion (1 lb. – Italian)

   Garlic (3 cloves)

   Unsalted butter (3 tbsp.)

   Grappa or wine Green onions (1/3 lb.)

   Rosemary (½ tsp.)

   Fontina cheese (1 cup – grated)

   Salt (to taste)

   Cipollini onions (1 lb.)

   Thyme (½ tsp.)

   Beef broth (6 cups)

   Tuscan bread

   Fresh ground black pepper (to taste)

   Vito & Joe’s Extra Virgin Olive Oil (½ cup)

   Parmesan cheese (1 cup – grated – fresh)

    

 

 

 

 

 

 

 

 

 

 

 

 

 

Steps:
  1. Turn the oven to a broil at 400 degrees. 
  2. Peel and slice the red onions and the Cipollini onions into ¼ inch chunks. 
  3. Cut the green onions into pieces approximately ½ inch long. 
    1. Also using some of the greens for extra flavor. 
  4. Slice the garlic on an angle. 
    1. Set aside. 
    2. Put 1/3 of a cup of Vito & Joe’s Extra Virgin Olive Oil into a saucepan. 
  5. Put the onions in the saucepan and sauté covered in a pan for 15 – 30 minutes to get a nice golden brown caramelization on the onions. 
  6. Once the onions are caramelized, add the garlic glove slices.
  7.  Continue to sauté and stir the onions and garlic together on low-medium heat while you are preparing your bread. 
  8. While the onions are sautéing, prepare your bread by cutting it into large chunks. 
    1. Set some bread slices aside to serve on the side of your soup. 
  9. Brush all the sides of the bread slices and chunks with Vito & Joe’s Extra Virgin Olive Oil.
  10. Sprinkle all sides with salt and pepper. 
  11. Brush the bread one more time with the oil. 
  12. Grill or toast the bread chunks and slices. 
  13. After your bread is grilled/ toasted, add your butter, thyme, and rosemary to the onions. 
  14. Add a splash of grappa or wine to the onions.
    1. Let them heat up and brown. 
  15. Add a ½ a teaspoon salt and a ½ a teaspoon to 1 teaspoon of black ground pepper to taste. 
  16. Add beef broth to the onions and let them simmer. 
  17. Mix the cheeses together in a bowl. 
  18. Using the grilled chunks bread, put 1 chunk of bread into a bowl and ladle some of the soup over the bread.
  19. Top each bowl with a good serving of your cheese mix. 
  20. Place the bowls in the broiler for 5 – 7 minutes. 
    1. Watch carefully so they don’t burn. 
  21. Serve with the grilled or toasted slices of Italian bread. Enjoy!
