Tomato Tart on Puff Pastry

Ingredients

  • 1 pound of large tomatoes (about 3 tomatoes)

  • 1 clove of garlic

  • 5-6 leaves of basil

  • 1 egg

  • 1/2 teaspoon of oregano

  • 1/4 to 1/3 teaspoon of rosemary

  • 1 sheet of puff pastry (about 1 foot by 10 inches)

  • 1 cup of shredded dried mozzarella

  • 1 cup of grated Parmesan Reggiano

  • Vito and Joe’s Extra virgin Italian olive oil

  • Salt

  • Freshly ground black pepper

How to Prepare

  1. Preheat the oven to 400 degrees Fahrenheit.

  2. Prep the tomatoes by slicing them thinly, about 1/8 inch thick. Remove the bottom part of the first tomato and discard. Place the tomato slices on a paper towel and sprinkle a little salt on top. Let them sit for 20 minutes to draw out moisture.

  3. Use a garlic press to crush the clove of garlic.

  4. Prep the puff pastry by lining a cookie sheet with parchment paper. Apply a thin layer of Vito and Joe’s Extra Virgin Olive Oil on the parchment paper. Place the puff pastry on the oiled parchment paper and gently stretch it if needed. Use a fork to poke holes throughout the puff pastry.

  5. In a bowl, beat the egg and set it aside.

  6. Spread about two-thirds of the shredded mozzarella and grated Parmesan Reggiano on the puff pastry, leaving a border around the edges. Sprinkle about three-quarters of the oregano, rosemary, and crushed garlic on top of the cheese.

  7. Arrange the tomato slices on the puff pastry, covering the cheese and herbs. Sprinkle the remaining shredded mozzarella, grated Parmesan Reggiano, oregano, rosemary, and crushed garlic on top of the tomatoes.

  8. Drizzle some olive oil over the tomatoes.

  9. Fold the edges of the puff pastry inward to create a border.

  10. Brush the beaten egg on the edges of the puff pastry.

  11. Season the tart with salt and freshly ground black pepper.

  12. Place the cookie sheet with the tart in the preheated oven and bake for about 20-25 minutes, or until the puff pastry is golden brown and the cheese is melted and bubbly.

  13. Once cooked, remove the tart from the oven and let it cool for a few minutes before slicing and serving.
