Tuscan Ricotta Cheese with Broccoli Pie

Ingredients

  •  1 lb Green Broccoli

  • ½ lb Whole Milk Ricotta Cheese

  • 4 Oz of Parmesan Reggiano

  • 2 Cloves of garlic 

  • Lemon Zest

  • ⅓ cup Almonds

  • Nutmeg sprinkle

  • Black Pepper ¼ teaspoon

  • Sea Salt 

  • Red pepper flakes ⅛ teaspoon

  • Pie Dough Only one side

  • Vito and Joe’s Olive Oil or Extra Virgin Olive Oil

How to Prepare

  1. Cut the Broccoli down into bite size pieces. Then Blanch the Broccoli. 

  2. In a Pan Add 2-3 tablespoons Olive Oil, and then add the pressed Garlic cloves in as well as the Red pepper Flakes. Mix well, and cook on a low heat to medium heat. For about 10 minutes

  3. Once the Water in the Pot that you are using to Blanch the Broccoli has turned a nice green color, then the broccoli is done, you are going to add some cold water to stop the cooking process of the broccoli.

  4.  After the Broccoli has cooled a little in the pot, you are going to strain it and place it into a large mixing bowl. 

  5. Once the Broccoli is in a large Mixing Bowl, you're going to add the Ricotta Cheese, a dash of Nutmeg, and a ¼ teaspoon of lemon, along with some salt and black pepper and about ½ of the Parmesan Reggiano Cheese that the recipe calls for. 

  6. Mix Carefully to not break apart the broccoli.

  7. Once the Broccoli is all mixed, you're going to add the cooled down Oil Mix you made in the pan on the stove top, to the Broccoli Mixture. Little at a time and Mix in between each time you add the Oil in.  

  8. Let sit aside for about 10-15 minutes while you get your pie crust ready. 

  9. Once your pie crust is all set and in the Pie pan if you made homemade or if you store bought a pie crust. You are going to pour in the Broccoli Mix into your pie Crust, and make sure that it's even all the way around. 

  10. Then Roughly chop up the almonds and then place them on top of the Broccoli mix, evenly. 

  11. Then place the remaining half of the Parmesan Reggiano on top of the Almonds and Broccoli mix and Bake at 350 degrees for about 20-35 mins until the top is lightly browning. 

  12. Once it's Done let it cool, then cut and serve and Enjoy.
