World’s Best Lemon Tiramisu

Ingredients

  • 2 pounds of ladyfingers

  • 2 cups of limoncello (or lemonade)

  • 1 cup of water

  • 2-3 tablespoons of lemon juice

  • Zest of 1 lemon

    For the filling:

  • 2 ½ cups of heavy whipping cream

  • 1 pound of mascarpone cheese

  • ¼ cup of sugar

  • 1 teaspoon of vanilla extract

  • 2 teaspoons of lemon extract

  • 1 tablespoon of lemon juice

  • Zest of 1 lemon

  • 1 pound to 2 pounds of lemon curd

How to Prepare

  1. In a mixing bowl, combine the heavy whipping cream and 2 tablespoons of sugar. Whip until soft peaks form.

  2. Add the zest of 1 lemon, 1 teaspoon of vanilla extract, 2 teaspoons of lemon extract, and 1 tablespoon of lemon juice to the whipped cream. Mix gently to incorporate the flavors.

  3. In another mixing bowl, combine the mascarpone cheese, lemon curd, ¼ cup of sugar, and the zest of 1 lemon. Mix until well combined and smooth.

  4. Fold about one-third of the whipped cream into the cheese mixture to loosen it up.

  5. Take a dish and spread a layer of the cheese mixture on the bottom.

  6. Dunk the ladyfingers in a mixture of limoncello, water, lemon juice, and lemon zest. Place the soaked ladyfingers on top of the cheese mixture.

  7. Repeat the process of layering with the remaining ladyfingers, cheese mixture, and lemon curd.

  8. Finish with a layer of cheese mixture on top.

  9. Sprinkle some lemon zest over the final layer.

  10. Optional: Drizzle some extra virgin olive oil on top for added flavor.

  11. Refrigerate the lemon tiramisu for at least 4 hours or overnight to allow the flavors to meld together.
