World's Best Olive Oil Cake with Orange

Ingredients

  • 1 ½ cups all-purpose or pastry flour

  • 1 cup granulated sugar

  • 1 tsp. baking soda

  • 1 tsp. baking powder

  • ½ tsp. salt

  • 3 eggs

  • Zest of 1 orange

  • 3 tbsp. fresh squeezed orange juice

  • 3 tbsp. powdered sugar

  • 1 cup whipping cream, chilled

  • ½ tsp. vanilla extract

  • ½ tsp. orange extract

  • 1 cup buttermilk or greek yogurt

  • Fresh ground nutmeg

  • ¾ cup Vito & Joe’s Olive Oil

How to Prepare

  1. Preheat the oven to 350°F. Line a 9” round cake pan with parchment paper.

  2. To a medium bowl, add 3 eggs and whisk . Add 1 cup granulated sugar and cream the sugar and eggs together, until it gets light yellow and frothy. Then add 1 cup buttermilk (or greek yogurt) and whisk to combine.

  3. Continue whisking and add ¾ cup Vito & Joe’s Olive Oil and mix until combined. Whisk in the zest of 1 orange and 3 tbsp. of fresh squeeze orange juice. Set aside.

  4. In another medium bowl, add 1 ½ cups flour, 1 tsp. baking soda, 1 tsp. baking powder, ½ tsp. salt, and a few swipes of fresh ground nutmeg (around 1/16 tsp.). Mix everything together.

  5. Add half of your dry ingredients to the wet ingredients and begin mixing. Once combined, add the rest of your dry ingredients and mix everything together. Stir slowly for a minute or two to combine everything well. Set aside and let rest for around 15 minutes to let the flour hydrate.

  6. Add the batter to your prepared cake pan and put in the oven at 350°F for around 30 minutes. Check every 10 minutes and take out when it just barely starts to get golden brown.

  7. While the cake cooks, prepare your whipped cream. To a large mixing bowl, add 1 cup chilled whipping cream. Whisk until the whipping cream begins to have some structure, around 1 to 2 minutes. Then, add 1 tbsp. powdered sugar, ½ tsp. vanilla extract, and ½ tsp. orange extract. Continue whipping until stiff peaks form, around 2 minutes. Put into the fridge until ready to serve.

  8. Once the cake is ready, remove and let cool until warm enough to handle. Transfer to a serving plate. Dust the top with 2 tbsp. powdered sugar and top with whipped cream.

  9. Serve and enjoy!
